Honey Butter Roasted Carrots

Honey butter roasted carrots are oven-roasted until tender and caramelized, then finished with a glossy honey-butter glaze. The method uses a garlic-honey emulsion for flavor, plus fresh thyme and flaky sea salt for brightness.

Ingredients

Carrots
  • 2 lb carrots Rainbow or regular, peeled
  • 0.25 tsp flaky sea salt For finishing
Honey butter glaze
  • 3 tbsp butter Melted
  • 3 tbsp honey
  • 1 tbsp olive oil
  • 2 clove garlic Minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp fresh thyme leaves Chopped or whole leaves

Equipment

  • 1 sheet pan

Method

Prep
  1. Preheat oven to 400F and line a sheet pan with parchment.
  2. Whisk melted butter, honey, olive oil, garlic, salt, and black pepper until smooth and glossy.
Roast
  1. Toss peeled carrots with half the honey butter, then spread them in a single layer on the sheet pan.
  2. Roast for 25-30 minutes at 400F, until tender and caramelized, with browned edges and a shiny glaze.
Finish
  1. Brush the roasted carrots with the remaining honey butter as soon as they come out of the oven.
  2. Finish with fresh thyme leaves and flaky sea salt for a fragrant, salty top.

Notes

For more caramelization, keep carrots in a single layer with space between pieces—crowding steams them instead of browning. Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat on a sheet pan in a 375F oven until warmed through. For a vegan swap, use plant-based butter and maple syrup in place of honey (note: texture and flavor will be slightly different).
