Roasted Mushrooms with Garlic and Thyme

Roasted Mushrooms with Garlic and Thyme are oven-browned and deeply caramelized, tossed in garlicky butter and finished with bright lemon juice. Halved cremini mushrooms roast in a single layer until they release their liquid and turn golden, then get a final 8–10 minutes for deep color.

Ingredients

cremini mushrooms
  • 1.5 lb cremini mushrooms, halved
olive oil
  • 3 tbsp olive oil
garlic
  • 4 clove garlic, minced
thyme
  • 1 tbsp fresh thyme leaves
salt
  • 0.5 tsp salt
black pepper
  • 0.25 tsp black pepper
butter
  • 2 tbsp butter
lemon juice
  • 1 tbsp fresh lemon juice
parsley
  • 2 tbsp fresh parsley, chopped

Equipment

  • 1 sheet pan

Method

Roast the mushrooms
  1. Preheat the oven to 425F and place a sheet pan inside to heat while you prep. This helps the mushrooms start browning right away.
  2. Toss the halved mushrooms with olive oil, salt, and black pepper, then spread them in a single layer on the sheet pan. Make sure the cut sides have space so they roast instead of steam.
  3. Roast for 15 minutes until the mushrooms release their liquid and begin to brown. Look for sizzling moisture at the edges and deeper tan spots.
Garlic-thyme finish
  1. Add the minced garlic, thyme leaves, and butter, then toss to coat evenly. You should see the butter melt and lightly gloss the mushrooms.
  2. Roast for 8-10 minutes more until deeply golden. Use the color cue—dark golden patches with caramelized edges.
  3. Drizzle with fresh lemon juice and sprinkle with chopped parsley, then serve hot. The top should look bright and fragrant right before eating.

Notes

For the best browning, keep the mushrooms in a single layer with minimal crowding, and use a hot sheet pan. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat at 400F for about 8 minutes. Freezing isn’t recommended for best texture. For a dairy-free swap, use olive oil in place of butter (or a plant-based butter) when adding the garlic and thyme.
