  • 4 boneless skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 packet (1 oz) ranch seasoning mix
  • 8 strips bacon, cooked crispy and crumbled
  • 1.5 cup shredded cheddar cheese
  • 1 tbsp fresh chives, chopped
  • 0.25 tsp salt and pepper to taste
  • 0.5 tbsp extra chives and bacon for topping

Prep and assemble
  1. Preheat oven to 375°F and grease a 9x13 baking dish. Make sure the dish is coated so the topping releases cleanly.
  2. Season chicken breasts lightly with salt and pepper and place them in the prepared dish. Keep them spaced so they bake evenly.
  3. Beat cream cheese with ranch seasoning until smooth. Spreadable thickness is key—aim for a thick, cohesive layer.
  4. Spread the cream cheese ranch mixture thickly over each chicken breast. Cover the surface so it blankets the chicken as it bakes.
  5. Top each breast with crumbled bacon and shredded cheddar cheese. Cover the top fully so it turns golden and bubbly.
Bake and finish
  1. Bake for 25-30 minutes at 375°F until the topping is golden and bubbly and internal temperature reaches 165°F. Look for melted cheese edges that start to caramelize.
  2. Garnish with extra fresh chives and crumbled bacon and serve immediately. The contrast of bright herbs and crisp bacon finishes each bite.

Notes

Pro tip: soften the cream cheese fully before mixing so the ranch seasoning blends without lumps. Store leftovers in the refrigerator for up to 3-4 days; reheat covered in a 350°F oven until warmed through. Freezing is not recommended because the cream cheese ranch topping can become grainy after thawing. For a lighter option, swap part-skim or low-fat cream cheese and use reduced-fat cheddar while keeping the baking time the same.
