Ingredients

Cranberry sauce base
  • 12 oz fresh cranberries Use fresh for the best burst and thickening.
  • 0.75 cup sugar
  • 0.5 cup ruby port or red wine Choose port for deeper color and flavor.
  • 0.25 cup orange juice
  • 2 tbsp Grand Marnier or orange liqueur
  • 1 cinnamon stick
  • 1 tsp orange zest
  • 1 salt Pinch of salt to balance sweetness.

Equipment

  • 1 cast iron skillet
  • 1 Dutch oven

Method

Cook the cranberry mixture
  1. Combine sugar, ruby port or red wine, orange juice, cinnamon stick, and salt in a saucepan and bring to a boil over medium-high heat. You should see active bubbling across the surface within a minute or two.
  2. Add fresh cranberries, then reduce to a gentle simmer and cook for 10-12 minutes until the berries burst and the sauce thickens. The sauce should look glossy and cling slightly to the spoon.
Finish and chill
  1. Remove the saucepan from the heat and stir in Grand Marnier or orange liqueur and orange zest. The mixture will deepen in color and look shinier right after stirring.
  2. Discard the cinnamon stick. Make sure none remains in the sauce before cooling.
  3. Cool the cranberry sauce completely, then chill before serving. The sauce should thicken further after cooling.

Notes

Pro tip: simmer just until the berries burst and the sauce coats the back of a spoon—overcooking can make it stiff. Store covered in the refrigerator up to 5 days. Freezing is not recommended because the texture can become grainy after thawing. For a lower-alcohol option, replace the port/wine with additional orange juice and use the liqueur in a smaller amount or omit it.
