Cook the cranberry mixture
- Combine sugar, ruby port or red wine, orange juice, cinnamon stick, and salt in a saucepan and bring to a boil over medium-high heat. You should see active bubbling across the surface within a minute or two.
- Add fresh cranberries, then reduce to a gentle simmer and cook for 10-12 minutes until the berries burst and the sauce thickens. The sauce should look glossy and cling slightly to the spoon.
Finish and chill
- Remove the saucepan from the heat and stir in Grand Marnier or orange liqueur and orange zest. The mixture will deepen in color and look shinier right after stirring.
- Discard the cinnamon stick. Make sure none remains in the sauce before cooling.
- Cool the cranberry sauce completely, then chill before serving. The sauce should thicken further after cooling.
Notes
Pro tip: simmer just until the berries burst and the sauce coats the back of a spoon—overcooking can make it stiff. Store covered in the refrigerator up to 5 days. Freezing is not recommended because the texture can become grainy after thawing. For a lower-alcohol option, replace the port/wine with additional orange juice and use the liqueur in a smaller amount or omit it.
