Cook the chicken
- Season the boneless chicken breasts with garlic powder, salt, and black pepper, then cook them in olive oil over medium-high heat for 5–6 minutes per side until cooked through. The chicken should be browned on the outside and no longer pink in the center.
Assemble the sandwiches
- Butter the outside of all bread slices. Make sure the buttered sides face outward later so they toast into a golden crust.
Spread and layer
- Spread Dijon mustard on the unbuttered side of half the bread slices and mayonnaise on the other half. The creamy, tangy spread should coat each slice evenly.
- Layer Swiss cheese, cooked chicken, sliced ripe avocados, and crispy bacon on the Dijon side, then close the sandwich with the buttered-side out. Press lightly so the layers stay put.
Toast and melt
- Toast in a skillet over medium heat for 3–4 minutes per side until golden and the cheese is fully melted. Watch for a crisp exterior and a visible cheese melt at the edges.
Serve
- Slice diagonally and serve immediately. Serve while the avocado is creamy and the cheese pull is at its best.
Notes
For extra even cooking, pound the chicken breasts to a uniform thickness before seasoning. Refrigerate leftovers in an airtight container for up to 3 days; reheat in a skillet over medium heat until warmed through (avoid microwaving if you want the crust to stay crisp). Freezing is not recommended because the avocado softens after thawing. For a lower-saturated-fat option, use reduced-fat Swiss cheese and a light mayonnaise.
