Ingredients

Crock Pot Angel Chicken
  • 4 boneless skinless chicken breasts
  • 1 packet (0.7 oz) Italian dressing mix
  • 1 can (10.5 oz) cream of mushroom soup
  • 0.5 cup chicken broth
  • 8 oz cream cheese
  • 1 tbsp butter
  • 0.25 salt to taste
  • 0.25 black pepper to taste
  • 12 oz angel hair pasta cooked
  • 1 fresh parsley for serving
  • 1 parmesan for serving

Equipment

  • 1 Dutch oven

Method

Slow-cook the chicken
  1. Season the chicken breasts lightly with salt and black pepper, then place them in the crockpot.
  2. Whisk together the Italian dressing mix, cream of mushroom soup, and chicken broth until smooth, then pour over the chicken.
  3. Dot the cubed cream cheese over the top of the sauce to help it melt evenly.
  4. Cook on low for 6 hours or high for 3–4 hours until the chicken is extremely tender, with the sauce visibly thick and creamy at the end.
Shred and serve
  1. Shred the chicken directly in the crockpot using two forks, then stir in the butter until the sauce turns silky and coats the meat.
  2. Serve the shredded chicken and creamy sauce over cooked angel hair pasta, then top with fresh parsley and parmesan.

Notes

For best shredding, cook until the chicken tears easily with a fork; if needed, let it rest in the crockpot on low for 10 minutes to loosen the sauce. Refrigerate leftovers in an airtight container up to 3 days; freeze for up to 2 months (note: pasta can soften after thawing—stir sauce and chicken separately with freshly cooked pasta if you want the best texture). For a lighter option, use reduced-fat cream cheese and reduced-fat cream of mushroom soup while keeping the same cook times.
