Ingredients

Meatloaf
  • 2 lb ground beef
  • 0.67 cup breadcrumbs
  • 2 eggs
  • 0.33 cup milk
  • 1 packet (1 oz) French onion soup mix
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
Caramelized Onions
  • 3 onions thinly sliced
  • 2 tbsp butter
  • 0.5 tsp sugar
  • 4 Swiss cheese slices

Equipment

  • 1 slow cooker
  • 1 sheet pan

Method

Caramelize the onions
  1. Heat butter in a skillet over medium-low heat and add thinly sliced onions with a pinch of sugar. Cook 25–30 minutes, stirring often, until deeply golden, then set aside.
Build and slow-cook the meatloaf
  1. In a large bowl, mix ground beef, breadcrumbs, eggs, milk, French onion soup mix, Worcestershire sauce, salt, and pepper until evenly combined. Shape into a loaf.
  2. Line the slow cooker with a foil sling, then place the loaf inside. Top with half of the caramelized onions.
  3. Cover and cook on Low 5–6 hours or High 2.5–3 hours, until the internal temperature reaches 160°F. Keep covered for the full cooking time to maintain steady heat.
Finish with Swiss cheese and rest
  1. Layer the remaining caramelized onions and Swiss cheese over the top, then cover and cook on High for 10 minutes until the cheese melts. Lift the meatloaf out using the foil sling.
  2. Rest the meatloaf 10 minutes before slicing and serving. Letting it rest helps the juices settle for cleaner slices.

Notes

Pro tip: thinly slice the onions for faster, deeper caramelization—stirring often prevents scorching. Store leftovers in the fridge up to 3 days in an airtight container; reheat in the microwave until hot. Freezing is yes: wrap slices and freeze up to 2 months, then thaw overnight in the fridge. For a lower-carb option, swap breadcrumbs for almond flour breadcrumbs or crushed pork rinds (use less and adjust texture as needed).
