Ingredients

Green beans
  • 1.5 lb fresh green beans, trimmed Trimmed for even cooking.
Bacon
  • 8 bacon, halved crosswise Halve slices crosswise to wrap each bundle.
Butter glaze
  • 0.25 cup butter, melted Use melted butter for an even glaze.
  • 0.333 cup brown sugar For a sticky, bubbly finish.
  • 2 cloves garlic, minced Minced to distribute flavor.
  • 1 tbsp soy sauce Adds savory depth to the glaze.
  • 0.25 tsp black pepper Freshly ground if possible.

Equipment

  • 1 sheet pan

Method

Blanch and prep
  1. Preheat oven to 400F. Blanch green beans in boiling water for 3 minutes, then plunge into ice water and drain.
Wrap and glaze
  1. Gather 8-10 beans into a bundle and wrap with a half slice of bacon, seam-side down in a baking dish. Place bundles in rows so they cook evenly.
  2. Whisk melted butter, brown sugar, garlic, soy sauce, and black pepper until smooth. The glaze should look thick and glossy.
  3. Pour glaze evenly over the bundles. Make sure bacon tops and exposed bean edges get coated.
Bake and serve
  1. Bake 25-30 minutes at 400F until bacon is crisp and glaze is bubbly. Look for caramel-colored bubbling around the bundles.
  2. Spoon pan glaze over the bundles and serve warm. Add a little extra glaze right before serving for shine.

Notes

Pro tip: Keep the plunge into ice water brief but complete so the green beans stay bright and don’t turn dull. Refrigerate leftovers in an airtight container for up to 3 days; reheat in a 325F oven until warmed through. Freezer: no, bacon and glazed sugar can lose texture. Dietary swap: use turkey bacon for a lower-fat option while keeping the same bake time.
