Mango salsa
  • 2 ripe mangoes peeled and finely diced
  • 0.5 red onion minced
  • 0.25 cup fresh cilantro chopped

Method
 

Make the honey chipotle glaze
  1. In a small bowl, combine honey, minced chipotle peppers in adobo sauce, lime juice, and cumin until smooth to form a glaze.
Cook the shrimp
  1. Heat olive oil in a large skillet over medium-high heat and add minced garlic, cooking for 30 seconds until fragrant.
  2. Add the shrimp to the skillet and cook for 2-3 minutes per side until nearly cooked through.
  3. Pour the honey-chipotle glaze over the shrimp and toss to coat evenly, then cook for another 1-2 minutes.
Make the mango salsa
  1. In a separate bowl, combine diced mangoes, minced red onion, and chopped fresh cilantro to make mango salsa.
Assemble and serve
  1. Warm the corn tortillas on a griddle until pliable.
  2. Fill each tortilla with honey-chipotle shrimp.
  3. Top generously with mango salsa and serve with lime wedges.

Notes

For best texture, keep an eye on the shrimp once they go into the skillet—cook just until nearly done, then finish with the glaze so they stay juicy. Refrigerate leftovers in an airtight container up to 2 days; rewarm tortillas and shrimp gently. Freezing isn’t recommended because mango salsa can soften and weep. Dietary swap: use honey alternatives (like maple syrup) if you need a different sweetener flavor profile.
