Ingredients
  

Chicken breasts
  • 4 boneless skinless chicken breasts
  • 0.25 salt to taste
  • 0.25 pepper to taste
  • 0.25 garlic powder to taste
  • 0.25 smoked paprika to taste
  • 2 tbsp olive oil
Hot honey glaze
  • 0.25 cup honey
  • 2 tbsp hot sauce (Frank's RedHot)
  • 1 tbsp butter, melted
  • 1 tsp apple cider vinegar
  • 1 tsp red pepper flakes
  • 0.5 tsp garlic powder
  • 0.25 flaky sea salt for garnish
  • 0.25 fresh thyme for garnish
  • 1 tbsp extra hot honey drizzle on top

Method
 

Preheat and prep
  1. Preheat oven to 425°F and lightly oil a baking dish or cast iron skillet so the chicken bakes without sticking.
  2. Season chicken breasts on both sides with salt, pepper, garlic powder, and smoked paprika for even flavor all the way through.
Make the hot honey glaze
  1. Whisk together honey, hot sauce, melted butter, apple cider vinegar, red pepper flakes, and garlic powder until smooth and glossy.
Bake and caramelize the glaze
  1. Place chicken in the prepared dish and brush generously with the hot honey glaze, reserving some for basting so it can thicken and caramelize.
  2. Bake for 20-22 minutes at 425°F, basting with the remaining glaze once at the halfway point for a dark amber, sticky finish.
  3. Check doneness when the internal temperature reaches 165°F and the glaze looks caramelized and glistening with visible red pepper flakes.
Rest and finish
  1. Rest chicken for 5 minutes to help the juices settle and the glaze set slightly.
  2. Finish with flaky sea salt, fresh thyme, and an extra drizzle of hot honey for added heat and aroma.

Notes

For the stickiest glaze, brush generously at the start and baste once mid-bake rather than repeatedly. Refrigerate leftovers in an airtight container for up to 3 days; reheat gently in a 350°F oven until warmed through (microwave may soften the glaze). Freezing is not recommended because the honey sauce can separate after thawing. For a lower-sugar option, swap honey for a 1:1 sugar-free honey-style syrup (check that it caramelizes on bake).
