Ingredients

Baked potatoes
  • 4 large russet potatoes baked
Pot roast filling
  • 2 cup leftover pot roast shredded (or braised beef)
  • 0.5 cup leftover pot roast gravy or beef broth
Creamy potato mixture
  • 4 tbsp unsalted butter
  • 0.5 cup sour cream
  • 0.25 cup milk
  • 1.5 cup sharp cheddar shredded and divided
Toppings
  • 3 green onions sliced
  • salt to taste
  • pepper to taste

Equipment

  • 1 sheet pan

Method

Prep and preheat
  1. Preheat the oven to 400F. Halve the baked potatoes lengthwise and scoop out the flesh, leaving about a 1/4-inch shell for sturdy skins.
Make the creamy potato filling
  1. Mash the potato flesh with the butter, sour cream, milk, 1 cup cheddar, salt, and pepper until smooth. Aim for a creamy, lump-free texture so the filling stays cohesive when baked.
Combine with pot roast
  1. Warm the pot roast in the gravy, then fold it into the mashed potato mixture. Stir until evenly distributed so every spoonful has beef and creamy potato.
Assemble and bake
  1. Fill the potato shells with the pot roast mixture, then top each with the remaining cheddar. Arrange them on a sheet pan so the cheese can melt evenly.
  2. Bake for 15-18 minutes until the potatoes are heated through and the cheese is bubbly. Look for active bubbling around the edges for doneness.
Broil and finish
  1. Broil for 2 minutes until the tops are golden. Watch closely during broiling to prevent over-browning.
  2. Top with the green onions and a drizzle of extra gravy just before serving. Serve immediately while the filling is hot and creamy.

Notes

For the cleanest twice-baked texture, scoop evenly and keep the shells about 1/4-inch thick so they don’t collapse. Store leftovers in the refrigerator up to 3 days; reheat in a 350F oven until warmed through. Freezing is not recommended for best potato texture. If you want a lighter version, use low-fat sour cream and milk to reduce richness while keeping the same creamy consistency.
