Ingredients

Chicken
  • 1.5 lb chicken thighs, boneless
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 Salt and black pepper
Pitas and vegetables
  • 4 pita breads, warmed
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes, halved
  • 0.5 cucumber, diced
  • 0.5 red onion, thinly sliced
Herby ranch
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 garlic clove, minced
  • 2 tbsp buttermilk or milk
  • 1 Salt and pepper to taste

Equipment

  • 1 sheet pan

Method

Roast the chicken
  1. Preheat the oven to 425°F and line a sheet pan with foil (use the full oven preheat time for best roasting).
  2. Toss the chicken thighs with olive oil, garlic powder, paprika, salt, and pepper until evenly coated (look for a consistent reddish seasoning layer).
  3. Roast for 22–25 minutes at 425°F until cooked through and golden (a few browned edges are your visual cue).
  4. Rest the chicken for 5 minutes, then slice into strips (cut across the grain so the pieces stay juicy).
Make the herby ranch
  1. Blend mayonnaise, sour cream, dill, chives, parsley, minced garlic, and buttermilk (or milk) in a bowl until smooth (the color should look uniform).
  2. Season with salt and pepper to taste, then refrigerate until ready to use (chill helps the herbs stay bright).
Warm pitas and assemble
  1. Warm the pitas in the oven for the last 2 minutes of the chicken cooking (aim for soft, steamy pitas).
  2. Load each pita with roasted chicken slices, shredded lettuce, cherry tomatoes, cucumber, and red onion (distribute toppings evenly across the pitas).
  3. Drizzle generously with herby ranch and serve immediately (finish while the chicken and pitas are warm).

Notes

Pro tip: Resting the chicken keeps juices inside so the strips stay tender after slicing. Store assembled pitas separately—keep chicken and vegetables refrigerated up to 3 days, and store herby ranch refrigerated up to 4 days; assemble right before eating. Freezing: chicken freezes well for up to 2 months; reheat to steaming and refresh toppings. For a lighter option, use Greek yogurt in place of half the mayonnaise while keeping the same herbs and seasonings.
