  • 0.5 tsp smoked paprika
  • salt and pepper to taste
to serve
  • fresh parsley for serving
  • parmesan for serving

Equipment

  • 1 slow cooker

Method

Season and layer
  1. Season the beef cubes with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Place the baby potatoes in the bottom of the slow cooker and nestle the beef on top.
  3. Scatter the garlic and butter cubes over everything.
  4. Pour the beef broth and Worcestershire around the sides, then sprinkle the Italian seasoning over.
Slow cook
  1. Cook on Low for 6-8 hours, or on High for 3-4 hours, until the beef is tender.
  2. Stir gently to coat everything in the garlic butter sauce.
Serve
  1. Serve hot with fresh parsley and parmesan.

Notes

For the richest sauce, keep the lid on during the first 5 hours on Low (opening slows heating and can dry out edges). Store leftovers in the refrigerator for up to 4 days; reheat gently in a covered pot or microwave until warmed through. Freezing is not recommended because the potatoes can soften further after thawing. If you want a lighter option, use light butter (or half butter/half olive oil) while keeping the same cooking time.
