Season the chicken
- Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and cracked black pepper to taste.
Sear the chicken
- Heat vegetable oil in a cast iron skillet over medium-high heat and place chicken skin-side down; sear 6-7 minutes until deeply golden.
- Flip the chicken and sear 4 minutes more until golden; remove to a plate.
Build the onion mushroom gravy base
- In the same skillet, cook onions over medium heat for 6-7 minutes until deeply caramelized.
- Add mushrooms and garlic and cook 4-5 minutes until fragrant and softened.
- Sprinkle all-purpose flour over the vegetables and stir for 1 minute.
Create the gravy
- Gradually whisk in chicken broth, scraping up browned bits from the bottom of the skillet.
- Stir in heavy cream, Worcestershire sauce, and dried thyme.
Simmer and finish
- Return the chicken skin-side up to the skillet, cover, and simmer 15 minutes until cooked through and tender.
- Garnish with fresh parsley and serve over mashed potatoes or rice, spooning gravy over the chicken.
Notes
For the darkest, most flavorful gravy, don’t disturb the chicken during the first sear and be sure to whisk the broth thoroughly to dissolve the browned bits. Store leftovers in the fridge up to 3 days in a covered container; reheat gently on the stove until warmed through. Freezing is not recommended because cream-based gravy can break. For a lighter option, use half-and-half instead of heavy cream while simmering.
