Smothered chicken skillet
  • 4 boneless skinless chicken breasts Pounded thin for even searing.
  • 8 oz mushrooms Sliced.
  • 1 onion Large, sliced.
  • 2 tbsp butter Divided; melt with the aromatics.
  • 1 tbsp butter Divided; melt with the aromatics.
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 cup chicken broth Use to deglaze and loosen pan juices.
  • 2 cup Monterey jack cheese Shredded, for a thick melty layer.
  • 0.25 salt To taste.
  • 0.25 black pepper To taste.
  • 1 fresh parsley For garnish.

Method
 

Season and sear the chicken
  1. Season both sides of the chicken breasts with garlic powder, onion powder, salt, and black pepper.
  2. Heat the olive oil in an oven-safe skillet over medium-high heat, then sear chicken for 5–6 minutes per side until golden; set aside on a plate.
Caramelize mushrooms and onions
  1. Melt the butter in the same skillet, then add onions and mushrooms and cook over medium heat for 8–10 minutes until caramelized.
  2. Pour in the chicken broth and stir, scraping up browned bits to deglaze the pan.
Smother and broil
  1. Nestle the chicken back into the skillet on top of the mushroom-onion mixture.
  2. Pile Monterey jack cheese generously on top of each chicken breast.
  3. Place the skillet under the broiler for 3–4 minutes until the cheese is melted and bubbly; garnish with fresh parsley before serving.

Notes

For best browning, pat the chicken dry before seasoning and keep the skillet hot during the sear. Store leftovers in the refrigerator up to 3 days; reheat gently in a skillet until warmed through (cheese may need a quick broil). Freezing is not recommended because the chicken texture can soften after thawing. For a lower-fat option, use part-skim Monterey jack and reduce the butter to 1 tbsp total while keeping the same broil time.
