Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts
  • 2 tbsp Cajun seasoning or steak seasoning Use as written for classic steakhouse flavor.
  • 2 tbsp olive oil
Mushrooms and onions
  • 2 tbsp butter
  • 8 oz cremini mushrooms Slice before cooking.
  • 1 onion Thinly slice.
  • 2 cloves garlic Minced.
  • 0.5 salt and pepper to taste To taste; add as directed in the recipe steps.
  • 2 tbsp Jack Daniel's whiskey or chicken broth For deglazing; choose one.
Cheese topping
  • 8 slice Monterey Jack cheese Lay 2 slices on each chicken breast.
  • 1 fresh parsley For garnish.

Method
 

Sear the chicken
  1. Season the chicken generously with Cajun seasoning. Sear in olive oil in an oven-safe skillet over medium-high heat for 5-6 minutes per side until golden and the internal temperature reaches 165°F, then remove.
Cook the onions
  1. Melt the butter in the same pan. Cook the onions over medium heat for 8-10 minutes until deeply caramelized.
Sauté mushrooms and deglaze
  1. Add the mushrooms and garlic and cook for 4-5 minutes until golden. Deglaze with Jack Daniel's whiskey or chicken broth, then season with salt and pepper.
Assemble and broil
  1. Return the chicken to the pan. Top each breast with the mushroom and onion mixture, then lay 2 slices of Monterey Jack cheese over the top.
  2. Broil for 2-3 minutes until the cheese is melted, bubbly, and golden. Garnish with fresh parsley and serve.

Notes

Pro tip: use an oven-safe skillet so you can go straight from stovetop searing and smothering to broiling for faster, cleaner finishing. Store leftovers in an airtight container in the refrigerator for up to 3-4 days; reheat gently in a skillet or microwave until warmed through. Freezing is not recommended for best cheese texture. For a lower-fat option, choose part-skim Monterey Jack and use reduced butter.
