Ingredients

Dry and fruit mixture
  • 0.3333333333 cup brown sugar
  • 2 tsp cinnamon
  • 2 apples peeled and finely diced
Batter
  • 2 cup all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.6666666667 cup granulated sugar
  • 0.5 cup unsalted butter softened
  • 2 eggs
  • 1.5 tsp vanilla extract
  • 0.5 cup whole milk
Glaze
  • 0.5 cup powdered sugar
  • 2 tbsp milk

Equipment

  • 1 sheet pan

Method

Prep the pan and cinnamon-apple mix
  1. Preheat the oven to 350F, then grease a 9x5 loaf pan.
  2. Mix the brown sugar and 2 teaspoons cinnamon, then toss half with the finely diced apples so they are coated.
Make the batter
  1. Beat the softened unsalted butter and granulated sugar until fluffy, then beat in the eggs and vanilla extract.
  2. Whisk the all-purpose flour, baking powder, baking soda, and salt, then alternate adding the dry mixture with the whole milk to the butter mixture until just combined.
Assemble and bake
  1. Pour half the batter into the greased loaf pan, then layer half the apple mixture on top and sprinkle the remaining plain cinnamon-sugar over the apples.
  2. Pour the remaining batter over the layer, then top with the remaining apples.
  3. Bake at 350F for 55-60 minutes, until a toothpick comes out clean and the loaf is set in the center.
Glaze and serve
  1. Drizzle with the powdered sugar glaze while warm so it soaks slightly and creates a glossy finish.

Notes

Pro tip: dice the apples fairly small so they cook through and create lots of tender pockets like a fritter. Store the loaf in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days; warm slices briefly before serving. Freezing is yes—wrap individual slices and freeze up to 2 months, thaw overnight in the fridge. For a lighter option, replace some of the butter with an equal amount of unsweetened applesauce (use the same amount) for a slightly less rich texture.
