Method
Make the yeast dough
- Combine warm milk, yeast, and 1 tablespoon of the sugar, then rest 5 minutes until foamy (visual cue: a bubbly foam layer on top).
- Add the remaining sugar, melted butter, eggs, and vanilla, then mix in flour and salt to form a soft dough (visual cue: no dry flour pockets).
- Knead for 8 minutes until smooth (visual cue: dough looks elastic and slightly shiny), then place in a greased bowl and rise for 1 hour until doubled (visual cue: dough expands to about twice the size).
Cook the apple filling
- Cook diced apples with butter, brown sugar, cinnamon, and nutmeg for 5-7 minutes until caramelized (visual cue: syrupy coating and softened apple edges).
- Cool the caramelized apple filling before rolling (visual cue: it thickens and is no longer hot to the touch).
Shape, rise, and bake
- Roll the dough into a 12x18 inch rectangle, then spread the apple filling evenly (visual cue: filling reaches near the edges without pooling).
- Roll tightly, cut into 12 rolls, and arrange them in a greased 9x13 dish (visual cue: cut sides show layered swirls).
- Rise for 45 minutes until puffy (visual cue: rolls fill out and touch more closely in the dish).
- Bake at 375F for 22-25 minutes until golden (visual cue: tops are browned and the center springs back lightly).
Glaze and serve
- Beat the glaze ingredients until smooth, then drizzle over warm rolls (visual cue: glaze sinks into creases and looks glossy).
Notes
For the best rolls, keep the dough soft during kneading—add only a dusting of flour if needed, and don’t skip cooling the apple filling so it doesn’t melt the dough. Store covered in the fridge up to 4 days; rewarm 10-15 minutes in a 300F oven. Freezing is yes: freeze baked, then thaw overnight in the fridge and rewarm. For a lighter option, use reduced-fat cream cheese in the glaze and slightly reduce milk to keep the drizzle thick.
