Ingredients

Apple fritter batter
  • 2 cup all-purpose flour
  • 0.25 cup granulated sugar
  • 2.5 tsp baking powder
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.5 tsp salt
  • 2 eggs
  • 0.75 cup whole milk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 2 cup apples peeled and finely diced
Frying and glaze
  • 1 Vegetable oil for frying
  • 1.5 cup powdered sugar For glaze
  • 3 tbsp milk For glaze
  • 1 tsp vanilla extract For glaze

Equipment

  • 1 Dutch oven
  • 1 sheet pan

Method

Make the fritter batter
  1. Whisk all-purpose flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt until evenly combined.
  2. Whisk eggs, whole milk, melted butter, and vanilla extract, then fold into the dry ingredients until just combined.
  3. Fold in apples until the batter is thick and the apple pieces are evenly distributed.
Fry and glaze
  1. Heat 2 to 3 inches of vegetable oil to 375F in a Dutch oven.
  2. Drop 1/4 cup portions of batter into the oil and fry for 2 to 3 minutes per side, until deeply golden.
  3. Drain the fritters on a sheet pan and whisk the glaze, then drizzle generously over the still-warm fritters.

Notes

Pro tip: keep the oil at 375F and avoid overcrowding so the fritters fry evenly and stay crisp. Refrigerate leftovers in an airtight container up to 2 days; rewarm in a 350F oven for 5–8 minutes. Freezing is best for unfrosted fritters—freeze up to 2 months and glaze after reheating. For a dairy-light option, use lactose-free milk in both batter and glaze and swap in dairy-free butter.
