Season and roast
  1. Drizzle olive oil over the potatoes, tomatoes, and garlic, then sprinkle oregano, thyme, red pepper flakes, salt, and pepper over everything.
  2. Roast for 40–45 minutes, until the potatoes are golden and tender and the feta is softened and golden.

  1. Squeeze the lemon juice over the hot roasted dish, then scatter lemon zest and fresh herbs on top.
  2. Break the feta into the potatoes and toss everything together so the feta becomes a creamy coating.

Notes

For the best creamy texture, cut the potatoes halves evenly so they finish at the same time; roast on a sheet pan so the bottoms caramelize. Store leftovers in an airtight container in the fridge for up to 3 days; reheat in a 375°F oven until warm. Freezing isn’t recommended for the creamiest feta texture. For a dairy-light option, use a firm dairy-free feta-style block and roast the same way.
