Ingredients

Sweet potatoes
  • 2 sweet potatoes Use large sweet potatoes for sturdier vessels.
Eggs and dairy
  • 4 eggs Scramble until just set and still slightly soft.
  • 2 tbsp sour cream For a cool, tangy finish on top.
  • 1 tbsp butter For creamy scrambled eggs.
  • 0.5 cup sharp cheddar Shred for best melt.
Bacon and aromatics

  • 2 green onions Slice thin for freshness.
Seasoning and serving
  • 0.25 salt and pepper Season to taste.
  • 0.25 hot sauce Serve on top (adjust heat level).

Equipment

  • 1 sheet pan

Method

Bake the sweet potatoes
  1. Preheat the oven to 400F and prick the sweet potatoes all over with a fork.
  2. Bake for 45-50 minutes, until completely tender when pierced with a knife, then remove from the oven.
  3. Slice each sweet potato open and fluff the flesh with a fork.
Make and season the eggs
  1. Melt the butter in a skillet over medium heat and scramble the eggs until they are set, then season with salt and pepper.
Load and serve
  1. Spoon scrambled eggs into each sweet potato and top with bacon crumbles, shredded cheddar, and green onions.
  2. Add a dollop of sour cream and drizzle hot sauce over the top before serving.

Notes

For the quickest assembly, cook the bacon and shred the cheddar while the sweet potatoes bake. Refrigerate leftovers in an airtight container for up to 3 days; reheat sweet potatoes and toppings separately for best texture. Freezing is not recommended because the sweet potato and eggs can become watery after thawing. For a lighter option, use turkey bacon and reduced-fat cheddar while keeping the same baking and assembly steps.
