Ingredients

oatmeal cake layers
  • 2 flour
  • 1.5 cup rolled oats
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 2 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 tsp salt
  • 1 cup butter
  • 1.5 cup brown sugar
  • 4 eggs
  • 1 cup sour cream
  • 2 tsp vanilla
marshmallow cream filling
  • 0.5 cup unsalted butter
  • 4 oz cream cheese
  • 1 can (7 oz) marshmallow creme
  • 2 cup powdered sugar
  • 1 tsp vanilla

Equipment

  • 1 sheet pan
  • 1 stand mixer

Method

Bake the oatmeal cake layers
  1. Preheat oven to 350F and grease two 9-inch round pans.
  2. Beat butter and brown sugar until smooth, then add eggs, sour cream, and vanilla and mix until combined.
  3. Fold in flour, rolled oats, baking powder, baking soda, cinnamon, nutmeg, and salt until no dry streaks remain.
  4. Divide the batter evenly between the two pans.
  5. Bake at 350F for 30-35 minutes, until the centers spring back when lightly pressed.
  6. Cool the cakes completely before filling and frosting.
Make and assemble the marshmallow cream filling
  1. Beat softened unsalted butter and cream cheese until smooth.
  2. Beat in marshmallow creme, powdered sugar, and vanilla until the filling is very fluffy.
  3. Frost the cake between the layers and spread the remaining filling over the outside of the cake.

Notes

Pro tip: for the flattest frosting layers, cool the cakes completely and level the tops only if needed. Store leftovers covered in the refrigerator for up to 4 days; freeze unfrosted cake layers for up to 2 months, then thaw and make the filling fresh. For a lighter option, use low-fat cream cheese while keeping the marshmallow creme as written to maintain the fluffy texture.
